Description

A comforting and creamy one-pot meal, this Broccoli Cheese Orzo is a flavorful combination of tender orzo pasta, broccoli, and a blend of cheddar and Parmesan cheeses. Perfect for a quick and satisfying dinner for the whole family.

Ingredients

Scale

Ingredients:

  • 1 tablespoon olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup dry orzo pasta
  • 2 cups low-sodium vegetable or chicken broth
  • 2 cups finely chopped broccoli florets
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk (any kind)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil or butter: In a large skillet or saucepan, heat olive oil or butter over medium heat.
  2. Cook onion and garlic: Add the chopped onion and cook until soft. Stir in the garlic and cook for another 30 seconds.
  3. Add orzo and broth: Add the dry orzo and stir to coat, then pour in the broth and bring to a simmer.
  4. Stir in broccoli: Add the chopped broccoli, salt, and pepper. Cover and cook for 8–10 minutes until orzo is tender.
  5. Add milk and cheese: Stir in the milk, cheddar cheese, and Parmesan until melted and creamy. Serve warm.

Notes

  • For extra protein, stir in cooked chicken or white beans.
  • You can blend some cooked broccoli into the broth for a smoother texture and richer color.
