For the dough:
- 2 ripe bananas (mashed)
- 2 1/4 teaspoons active dry yeast
- 1/4 cup warm milk (110°F)
- 2 tablespoons granulated sugar
- 1/4 cup unsalted butter (melted)
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 1/2 to 3 cups all-purpose flour
For the filling:
- 1/2 cup brown sugar (packed)
- 2 teaspoons ground cinnamon
- 2 tablespoons unsalted butter (softened)
For the glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
- Add the mashed bananas, melted butter, salt, and vanilla, and stir to combine. Gradually mix in 2 1/2 cups of flour, adding more as needed until the dough is soft but not sticky.
- Knead the dough in the bowl for about 5–7 minutes. Cover the bowl with a towel and let the dough rise in a warm place for about 1 hour or until doubled in size.
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish. Roll the dough out on a lightly floured surface into a 10×14-inch rectangle.
- Spread the softened butter over the dough, then sprinkle evenly with brown sugar and cinnamon. Starting from the long side, roll the dough tightly into a log and slice into 9–12 rolls.
- Place the rolls in the prepared baking dish and bake for 22–28 minutes or until golden brown.
- While the rolls are baking, whisk together the powdered sugar, milk, and vanilla to make the glaze. Drizzle the glaze over the warm rolls before serving.

- Use very ripe bananas for the best flavor and natural sweetness.
- You can add chopped nuts or mini chocolate chips to the filling if desired.
