- Preheat the Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the Butter and Sugar: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Mix the Batter: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the oats and raisins.
- Bake the Cookies: Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are golden and the centers are still soft.
- Cool and Enjoy: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For chewier cookies, slightly underbake and let them finish setting on the baking sheet.
- You can soak the raisins in warm water for 10 minutes before adding to keep them plump and soft.
- Add 1/2 cup chopped walnuts for extra texture if desired.
