Description

  • 2 large eggs

Mix-Ins:

  • 3 cups old-fashioned rolled oats
  • 1 cup raisins
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in Mix-Ins: Stir in the oats, raisins, and walnuts if using.
  6. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10–12 minutes, or until the edges are golden and the centers look set.
  7. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute raisins with dried cranberries or chocolate chips.
  • For chewier cookies, slightly underbake and let them finish setting on the baking sheet.
