- 1 cup pitted Medjool dates
- 1 cup raw walnuts or almonds
- 1/4 cup chocolate protein powder
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons almond butter or peanut butter
- 1 tablespoon honey or maple syrup
- 1/4 teaspoon salt
- 2 tablespoons mini dark chocolate chips (optional)
Instructions
- In a food processor, blend dates until they form a sticky paste. Add walnuts, protein powder, cocoa powder, almond butter, honey, and salt. Pulse until the mixture comes together into a thick dough, scraping down sides as needed.
- If mixture is too dry, add 1–2 teaspoons of water and pulse again. Stir in mini chocolate chips if using. Roll dough into 1-inch balls and place on a parchment-lined plate or baking sheet.
- Chill in the refrigerator for at least 30 minutes before serving.
