  • 1 cup pitted Medjool dates
  • 1 cup raw walnuts or almonds
  • 1/4 cup chocolate protein powder
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons almond butter or peanut butter
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon salt
  • 2 tablespoons mini dark chocolate chips (optional)

Instructions

  1. In a food processor, blend dates until they form a sticky paste. Add walnuts, protein powder, cocoa powder, almond butter, honey, and salt. Pulse until the mixture comes together into a thick dough, scraping down sides as needed.
  2. If mixture is too dry, add 1–2 teaspoons of water and pulse again. Stir in mini chocolate chips if using. Roll dough into 1-inch balls and place on a parchment-lined plate or baking sheet.
  3. Chill in the refrigerator for at least 30 minutes before serving.
