- 1 cup pitted Medjool dates
Nuts:
- 1/2 cup walnuts
- 1/2 cup almonds
Additional Ingredients:
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- Optional: mini chocolate chips or chopped nuts for rolling
Instructions
- Prepare the Nut Mixture: In a food processor, pulse the walnuts and almonds until finely chopped.
- Shape the Bites: Scoop out tablespoon-sized portions and roll into balls. If desired, roll each bite in mini chocolate chips, chopped nuts, or cocoa powder.
- Chill and Store: Place on a plate or tray and refrigerate for at least 30 minutes to set. Store in an airtight container in the fridge for up to 1 week.
Add the dates, cocoa powder, maple syrup, vanilla extract, and salt. Process until the mixture forms a sticky dough that holds together when pressed.
