Instructions
- Make the Cookie Cups: In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms. Roll dough into 12 equal balls and press each into the bottom and up the sides of the muffin cups, creating a small well in the center. Bake for 10–12 minutes, or until the edges are lightly golden.
- Make the Lemon Filling: While the cookie cups bake, whisk together the eggs, sugar, flour, salt, lemon juice, and zest in a medium bowl until smooth. Remove the cookie cups from the oven (they may have puffed—use the back of a spoon to gently press the center down). Pour the lemon filling into each cup, filling almost to the top. Return to the oven and bake for another 10–12 minutes, or until the filling is just set.
- Cool completely in the pan, then carefully remove. Dust with powdered sugar before serving.
