For the Cake:
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt

- 1 cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups finely grated carrots
- 1 cup crushed pineapple (drained)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup shredded coconut (optional)
For the Frosting:
- 8 ounces cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 3–4 cups powdered sugar
- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a 9×13-inch pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, beat the granulated sugar, brown sugar, oil, eggs, and vanilla until well combined.
- Gradually add the dry ingredients into the wet ingredients and mix just until combined.
- Fold in grated carrots, pineapple, nuts, and coconut if using.
- Pour the batter evenly into the prepared pan(s).
- Bake for 30–35 minutes for round pans or 40–45 minutes for a 9×13 pan, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before frosting.
- For the frosting, beat cream cheese and butter until smooth and creamy. Add vanilla and salt. Gradually mix in powdered sugar until desired consistency is reached.
- Spread frosting evenly over the cooled cake. Decorate with chopped nuts or shredded coconut if desired.
Notes
- For a layered cake, chill the layers before frosting to reduce crumbs.
- Store frosted cake in the fridge and bring to room temperature before serving.
