  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups finely grated carrots
  • 1 cup crushed pineapple (drained)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup shredded coconut (optional)

For the Frosting:

  • 8 ounces cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 3–4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a 9×13-inch pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat the granulated sugar, brown sugar, oil, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients into the wet ingredients and mix just until combined.
  5. Fold in grated carrots, pineapple, nuts, and coconut if using.
  6. Pour the batter evenly into the prepared pan(s).
  7. Bake for 30–35 minutes for round pans or 40–45 minutes for a 9×13 pan, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool completely before frosting.
  9. For the frosting, beat cream cheese and butter until smooth and creamy. Add vanilla and salt. Gradually mix in powdered sugar until desired consistency is reached.
  10. Spread frosting evenly over the cooled cake. Decorate with chopped nuts or shredded coconut if desired.

Notes

  • For a layered cake, chill the layers before frosting to reduce crumbs.
