Description

A delicious and easy-to-make Mexican-inspired tater tot casserole that is perfect for a weeknight dinner. This flavorful dish combines seasoned ground beef, black beans, corn, and gooey cheese, all topped with crispy tater tots.

Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1/2 cup water

Additional Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (10 oz) Rotel diced tomatoes with green chiles, drained
  • 1 1/2 cups shredded cheddar cheese
  • 1 bag (28 oz) frozen tater tots
  • 1/2 cup sour cream (optional, for serving)
  • Chopped green onions and cilantro for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the beef: In a skillet, cook ground beef and onion until browned. Drain excess grease.
  3. Add seasoning: Stir in taco seasoning and water; cook until thickened.
  4. Combine ingredients: Add black beans, corn, and Rotel; mix well.
  5. Prepare the casserole: Spread beef mixture in a baking dish, top with cheese, and arrange tater tots.
  6. Bake: Bake for 30–35 minutes until tater tots are crispy. Add remaining cheese and bake for 5 more minutes.
  7. Serve: Garnish with sour cream, green onions, and cilantro.
