Ground Beef Mixture:
- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1/2 cup water
Additional Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 1 can (10 oz) Rotel diced tomatoes with green chiles, drained
- 1 1/2 cups shredded cheddar cheese
- 1 bag (28 oz) frozen tater tots
- 1/2 cup sour cream (optional, for serving)
- Chopped green onions and cilantro for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook the beef: In a skillet, cook ground beef and onion until browned. Drain excess grease.
- Add seasoning: Stir in taco seasoning and water; cook until thickened.
- Combine ingredients: Add black beans, corn, and Rotel; mix well.
- Prepare the casserole: Spread beef mixture in a baking dish, top with cheese, and arrange tater tots.
- Bake: Bake for 30–35 minutes until tater tots are crispy. Add remaining cheese and bake for 5 more minutes.
- Serve: Garnish with sour cream, green onions, and cilantro.
Notes
- Swap beef with ground turkey or chicken if desired.
- Add chopped jalapeños or hot sauce for extra heat.
