Description

This Mediterranean Steak Bowl recipe is a delicious and nutritious meal that combines tender steak with flavorful Mediterranean-inspired ingredients like olives, feta cheese, and tzatziki sauce. Perfect for a healthy dinner option or meal prep.

Ingredients

Scale

Marinated Steak:

  • 1 pound flank or skirt steak
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Bowl Ingredients:

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes (halved)
  • 1/2 cucumber (diced)
  • 1/4 red onion (thinly sliced)
  • 1/4 cup Kalamata olives (sliced)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup tzatziki sauce

Instructions

  1. Marinate the Steak: In a small bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Rub the mixture all over the steak and let it marinate for at least 30 minutes at room temperature (or up to 8 hours in the fridge).
  2. Cook the Steak: Preheat a grill or skillet over medium-high heat. Cook the steak for 4–5 minutes per side for medium-rare, or until your desired doneness. Remove from heat, cover loosely with foil, and let rest for 5–10 minutes before slicing thinly against the grain.
  3. Assemble the Bowls: Divide the rice or quinoa between four bowls. Top with sliced steak, cherry tomatoes, cucumber, red onion, olives, and feta cheese. Drizzle with tzatziki sauce and sprinkle with fresh parsley. Serve warm or at room temperature.

Notes

  • You can swap the steak for grilled chicken, lamb, or tofu.
  • Add hummus or roasted chickpeas for extra texture and flavor.
  • Store components separately for meal prep.
