Description

This Mediterranean Chicken recipe is a flavorful and healthy dish that combines tender chicken with the bright flavors of lemon, oregano, and feta cheese. Perfect for a quick weeknight dinner or a special weekend meal.

Marinade:

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)

Additional Ingredients:

  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup Kalamata olives (pitted and halved)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, oregano, thyme, paprika, garlic powder, salt, pepper, and minced garlic. Add the chicken and toss to coat. Let marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  2. Preheat and sear: Preheat oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil and sear the chicken for 2–3 minutes per side until golden.
  3. Bake: Add cherry tomatoes and olives to the skillet around the chicken. Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  4. Finish and serve: Remove from oven and sprinkle with crumbled feta and fresh parsley. Serve warm.
