Mashed Potato Cheese Puffs:
- 2 cups cold mashed potatoes
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour

Instructions
- Preheat the oven: Preheat the oven to 400°F and lightly grease a 12-cup muffin tin with nonstick spray.
- Mix the ingredients: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, pepper, and flour.
- Fill the muffin cups: Spoon the mixture into the muffin cups, filling each about 3/4 full. Smooth the tops with the back of a spoon.
- Bake: Bake for 25–30 minutes until golden and slightly crispy. Let cool before serving warm.
