Mashed Potato Cheese Puffs:

  • 2 cups cold mashed potatoes
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and lightly grease a 12-cup muffin tin with nonstick spray.
  2. Mix the ingredients: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, pepper, and flour.
  3. Fill the muffin cups: Spoon the mixture into the muffin cups, filling each about 3/4 full. Smooth the tops with the back of a spoon.
