Pasta:

  • 12 oz pasta (such as fettuccine or linguine)

Shrimp:

  • 1 lb large shrimp, peeled and deveined

Other Ingredients:

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup fresh basil, chopped (optional)

Instructions

  1. Cook the Pasta: Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Cook the Shrimp: Season shrimp with salt and pepper. Cook in olive oil over medium-high heat for 1–2 minutes per side until pink. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, lower heat to medium, add butter, garlic, and red pepper flakes. Sauté, then stir in sun-dried tomatoes, oregano, thyme, cream, and Parmesan until creamy.
  4. Combine and Serve: Return shrimp to the skillet, add pasta and a splash of reserved water. Toss until heated through. Serve garnished with basil.

  • Use half-and-half for a lighter version.
  • You can swap shrimp for chicken or scallops.
