- Prepare Simple Syrup: In a small saucepan, combine equal parts sugar and water, typically 1 cup each. Heat gently while stirring until sugar fully dissolves. Let it cool completely before use.
- Prepare the Mango Mixture: Peel and chop the mangoes into chunks. Place the mango chunks in a blender with 1 tablespoon of the homemade simple syrup and blend until smooth and creamy. Transfer this mango puree to a bowl and stir in one-third of the Greek yogurt thoroughly mixing to combine the flavors.
- Prepare the Yogurt Mixture: In a separate bowl, whisk together the remaining two-thirds of Greek yogurt with the remaining simple syrup until smooth and well mixed, creating a sweet and creamy yogurt blend.
- Assemble the Popsicles: Take your popsicle molds and alternate layers of the mango mixture and the yogurt mixture. Pour a spoonful of mango puree, followed by a spoonful of yogurt mix, repeating the layering until molds are filled, creating a beautiful marbled effect.
- Freeze: Insert sticks into the molds and place the popsicles in the freezer. Freeze for 4 to 5 hours or until completely solid.
