Description

A refreshing and creamy Mango Lassi Popsicles recipe that combines ripe mangoes, Greek yogurt, and simple syrup into a delicious frozen treat. These layered popsicles are perfect for warm days and offer a delightful blend of fruity sweetness with tangy yogurt in every bite.

Ingredients

Scale

Mango Mixture

  • 2 large mangoes, peeled and chopped
  • 1 tablespoon Homemade Simple Syrup
  • 1/3 cup Greek yogurt

Yogurt Mixture

  • 2/3 cup Greek yogurt
  • Remaining Homemade Simple Syrup (approximately 3/4 cup)

Homemade Simple Syrup

  • 1 cup sugar
  • 1 cup water

Instructions

  1. Prepare Simple Syrup: In a small saucepan, combine equal parts sugar and water, typically 1 cup each. Heat gently while stirring until sugar fully dissolves. Let it cool completely before use.
  2. Prepare the Mango Mixture: Peel and chop the mangoes into chunks. Place the mango chunks in a blender with 1 tablespoon of the homemade simple syrup and blend until smooth and creamy. Transfer this mango puree to a bowl and stir in one-third of the Greek yogurt thoroughly mixing to combine the flavors.
  3. Prepare the Yogurt Mixture: In a separate bowl, whisk together the remaining two-thirds of Greek yogurt with the remaining simple syrup until smooth and well mixed, creating a sweet and creamy yogurt blend.
  4. Assemble the Popsicles: Take your popsicle molds and alternate layers of the mango mixture and the yogurt mixture. Pour a spoonful of mango puree, followed by a spoonful of yogurt mix, repeating the layering until molds are filled, creating a beautiful marbled effect.
  5. Freeze: Insert sticks into the molds and place the popsicles in the freezer. Freeze for 4 to 5 hours or until completely solid.
  6. Serve: To unmold the popsicles, run the molds briefly under warm water to loosen them. Gently pull out the popsicles and enjoy this cool, tropical treat!

Notes

  • Use ripe, sweet mangoes for the best flavor and natural sweetness in the popsicles.
  • Adjust the sweetness of the simple syrup based on your taste preference or the mango’s natural sweetness.
  • You can substitute Greek yogurt with regular yogurt or a plant-based yogurt for a dairy-free option.
  • Layering the mixtures creates a visually appealing marbled effect, but you can also swirl lightly with a skewer for a mixed texture.
  • These popsicles are best consumed within a week for optimal freshness.
