Macaroni and Cheese Bites:

  • 8 oz elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg (lightly beaten)
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (plus more for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or melted butter.
  2. Cook the macaroni: Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. Make the cheese sauce: In a medium saucepan, melt the butter, whisk in the flour, then slowly whisk in the milk. Add cheddar cheese, mozzarella cheese, garlic powder, paprika, salt, and pepper. Stir until smooth.
  4. Combine ingredients: Remove the cheese sauce from heat, let it cool slightly, then mix in the cooked macaroni, beaten egg, Parmesan cheese, and breadcrumbs.
  5. Bake: Spoon the mixture into the muffin tin, top with breadcrumbs, and bake for 15-18 minutes until golden.
