Macaroni and Cheese Bites:
- 8 oz elbow macaroni
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg (lightly beaten)
- 1/3 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (plus more for topping)

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or melted butter.
- Cook the macaroni: Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- Make the cheese sauce: In a medium saucepan, melt the butter, whisk in the flour, then slowly whisk in the milk. Add cheddar cheese, mozzarella cheese, garlic powder, paprika, salt, and pepper. Stir until smooth.
- Combine ingredients: Remove the cheese sauce from heat, let it cool slightly, then mix in the cooked macaroni, beaten egg, Parmesan cheese, and breadcrumbs.
- Bake: Spoon the mixture into the muffin tin, top with breadcrumbs, and bake for 15-18 minutes until golden.
- Serve: Let cool for 5 minutes before removing from the tin. Serve warm.
