Potato Skins:
- 6 medium russet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Filling:
- 1 cup shredded cheddar cheese
- 6 slices bacon (cooked and crumbled)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Optional chopped parsley for garnish
Instructions
- Preheat and Prepare: Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper. Scrub and pierce potatoes, then bake until tender.
- Scoop and Bake: Cut potatoes in half, scoop out flesh, brush with oil, season, and bake until crisp.
- Add Fillings: Fill skins with cheese and bacon, bake until cheese melts. Top with sour cream and green onions.

- Reserve scooped-out potato for other dishes.
