Description

This Lemon Chicken & Veggie Orzo Stir Fry is a vibrant and flavorful one-pan meal that combines tender chicken, fresh vegetables, and orzo pasta in a zesty lemon and Parmesan sauce.

For the Stir Fry:

  • 1 lb boneless, skinless chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Orzo:

  • 1 cup uncooked orzo pasta
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, halved and sliced

Additional Ingredients:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the Orzo: Cook the orzo according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli to the boiling water with the orzo. Drain and set aside.
  2. Cook the Chicken: Season the diced chicken with garlic powder, salt, and pepper. Cook in olive oil in a skillet over medium-high heat until golden and cooked through. Remove from the skillet and set aside.
  3. Prepare the Vegetables: In the same skillet, melt butter over medium heat. Add garlic and sauté until fragrant. Add bell pepper and zucchini, cooking until just tender.
  4. Combine Ingredients: Return chicken to the skillet, then add the drained orzo and broccoli. Stir in lemon juice, lemon zest, Parmesan, and parsley. Toss until well combined and heated through.
  5. Serve: Adjust seasoning to taste and serve warm.

  • You can swap orzo for quinoa, rice, or whole wheat pasta.
  • Add red pepper flakes for heat or stir in spinach for extra greens.
