For the Stir Fry:
- 1 lb boneless, skinless chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Orzo:
- 1 cup uncooked orzo pasta
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, halved and sliced
Additional Ingredients:
- 2 tablespoons butter
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the Orzo: Cook the orzo according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli to the boiling water with the orzo. Drain and set aside.
- Cook the Chicken: Season the diced chicken with garlic powder, salt, and pepper. Cook in olive oil in a skillet over medium-high heat until golden and cooked through. Remove from the skillet and set aside.
- Prepare the Vegetables: In the same skillet, melt butter over medium heat. Add garlic and sauté until fragrant. Add bell pepper and zucchini, cooking until just tender.
- Combine Ingredients: Return chicken to the skillet, then add the drained orzo and broccoli. Stir in lemon juice, lemon zest, Parmesan, and parsley. Toss until well combined and heated through.
- Serve: Adjust seasoning to taste and serve warm.

- You can swap orzo for quinoa, rice, or whole wheat pasta.
- Add red pepper flakes for heat or stir in spinach for extra greens.
