  • 1 cup finely chopped leeks (white and light green parts only)
  • 3/4 cup buttermilk, plus more for brushing

Instructions

  1. Preheat the oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare the dough: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the cold butter until it resembles coarse crumbs. Stir in the cheddar and leeks. Add buttermilk and mix gently until dough forms.
  3. Shape and bake: Turn the dough onto a floured surface, pat into a rectangle, fold, and pat out again. Cut out biscuits, place on baking sheet, brush with buttermilk, and bake for 14-16 minutes until golden brown. Serve warm.
