For the Piña Colada:
- 1/2 cup canned coconut milk
- 1/4 cup cream of coconut
- 1/4 cup fresh key lime juice
- 1/2 teaspoon key lime zest
- 2 ounces cream cheese (softened)
- 1 cup frozen pineapple chunks
- 1/2 cup ice
For Garnish:
- 1/2 cup crushed graham crackers
- whipped cream (optional)
- lime slices or zest for garnish
Instructions
- Blend the Ingredients: In a blender, combine the coconut milk, cream of coconut, key lime juice, lime zest, cream cheese, frozen pineapple, and ice. Blend until smooth and creamy.
- Adjust Consistency: If the mixture is too thick, add a splash more coconut milk to loosen it.
- Prepare Glasses: To garnish, dip the rim of each glass in a bit of lime juice, then press into crushed graham crackers to coat.
- Serve: Pour the Piña Colada mixture into the prepared glasses. Top with whipped cream and garnish with lime zest or a lime slice if desired. Serve immediately.
Notes
- For an adult version, add 1 to 1.5 ounces of white rum before blending.
- Use bottled key lime juice if fresh key limes aren’t available.
- For extra tang, add a bit more lime zest.
