Description

This Jello Rainbow Sherbet Ice Cream is a colorful and delightful frozen treat that’s perfect for hot summer days. It’s easy to make with just a few simple ingredients and no ice cream maker required. The combination of creamy sweetened condensed milk and fluffy whipped cream is infused with fruity Jell-O flavors, creating a vibrant and refreshing dessert that both kids and adults will love.

Ingredients

Scale

Whipped Cream Mixture:

  • 3 cups heavy cream
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract

Jell-O Mixtures:

  • 3 different flavors/colors of Jell-O gelatin powder (such as strawberry, lemon, and lime)
  • 3/4 cup boiling water (divided)
  • 3/4 cup cold water (divided)

Instructions

  1. Whip the Cream: In a large mixing bowl, whip heavy cream until stiff peaks form.
  2. Prepare Sweetened Cream: In another bowl, whisk together sweetened condensed milk and vanilla extract, then gently fold into whipped cream until fully combined.
  3. Divide and Color: Divide mixture into three bowls. Dissolve each flavor of Jell-O in boiling water, then stir in cold water. Fold one flavor of cooled gelatin into each bowl of cream mixture.
  4. Layer and Freeze: In a loaf pan, layer the three colors, swirling for a rainbow effect. Cover and freeze for at least 6 hours.
  5. Serve: Scoop and enjoy like ice cream!

Notes

  • For a more sherbet-like texture, let the ice cream sit at room temperature for 5–10 minutes before serving.
  • You can use sugar-free Jell-O for a lighter version.
