Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
- Prepare the Cupcake Batter: In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, cream the butter, sugar, and honey until light and fluffy. Beat in the eggs one at a time, then add vanilla. Mix in the dry ingredients in three parts, alternating with milk, beginning and ending with flour. Gently fold in the diced peaches.
- Bake the Cupcakes: Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
- Make the Cream Cheese Frosting: Beat the cream cheese and butter together until smooth. Add powdered sugar, honey, and vanilla, and beat until fluffy. Pipe or spread onto cooled cupcakes.
- Garnish: Garnish with peach slices or a drizzle of honey if desired.
