Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cream the butter and sugars: In a large bowl, cream together softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Add egg and vanilla: Beat in the egg and vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
- Mix the dough: Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms. Stir in chopped pecans.
- Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, and place on prepared baking sheets. Flatten slightly and bake for 12–15 minutes until lightly golden.
- Cool and enjoy: Let the cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
