Pie Crusts:
- 2 9-inch pie crusts (store-bought or homemade)
Cherry Filling:
- 6 cups fresh or frozen tart cherries (pitted)
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon almond extract
- 1/4 teaspoon ground cinnamon
- 1 tablespoon unsalted butter (cut into small pieces)
For Assembly:
- 1 egg (for egg wash)
- 1 tablespoon coarse sugar (optional, for topping)
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C).
- Prepare the Cherries: If using frozen cherries, thaw and drain them well. In a large saucepan, combine the cherries, sugar, cornstarch, lemon juice, almond extract, and cinnamon. Cook over medium heat, stirring often, until the mixture thickens and begins to bubble, about 8–10 minutes.
- Fill the Pie: Roll out one pie crust and fit it into a 9-inch pie dish. Pour the thickened cherry filling into the crust and dot with pieces of butter. Roll out the second crust and place it over the filling, or cut into strips to create a lattice top. Trim and crimp the edges to seal.
- Finish and Bake: Beat the egg and brush it over the top crust. Sprinkle with coarse sugar if using. Place the pie on a baking sheet and bake for 40–45 minutes, or until the crust is golden and the filling is bubbling. Let the pie cool completely for several hours before slicing to allow the filling to fully set.
Notes
- For best results, use sour (Montmorency) cherries.
- If your cherries are especially juicy, add an extra tablespoon of cornstarch.
