Instructions
- Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and cook for 4-5 minutes until browned on both sides. Remove the sausage from the pot and set aside.
- Sauté Onions and Garlic: Using the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn the garlic.
- Add Vegetables and Spices: Add the diced potatoes, chopped cabbage, smoked paprika, thyme, salt, and pepper to the pot. Stir well to evenly combine all ingredients.
- Add Broth and Simmer: Pour in the chicken broth, ensuring that the vegetables and sausage will be covered once added back. Bring the mixture to a boil, then reduce the heat to low and cover the pot to simmer.
- Cook Until Tender: Let the stew simmer for 20-25 minutes, stirring occasionally, until the potatoes are tender and the cabbage has softened thoroughly.
- Reintroduce Sausage: Return the browned smoked sausage to the pot and stir to combine with the vegetables. Simmer for an additional 5 minutes to heat the sausage through and meld flavors.
- Serve and Garnish: Serve the cabbage, potatoes, and smoked sausage hot, garnished with freshly chopped parsley if desired for a bright finish.
