  • 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the oats, whole wheat flour, baking soda, cinnamon, and salt.
  3. Mix the wet ingredients: In another bowl, whisk the melted coconut oil, honey, brown sugar, egg, and vanilla extract until smooth.
  4. Combine the ingredients: Add the wet ingredients to the dry and stir just until combined. Fold in raisins or chocolate chips and nuts if using.
  5. Bake the cookies: Drop rounded tablespoons of dough onto the baking sheet and flatten slightly. Bake for 9–11 minutes until lightly golden. Cool on the pan before transferring to a wire rack.
