- 1 1/2 cups rolled oats
- 1/4 cup natural peanut butter or almond butter
- 1/3 cup raisins or chopped dates
- 1/4 cup chopped nuts (walnuts or almonds)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- pinch of salt
- optional: 2 tablespoons unsweetened shredded coconut or dark chocolate chips (no sugar added)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix wet ingredients: In a medium bowl, mash the bananas until smooth. Stir in the peanut butter and vanilla extract until well combined.
- Add dry ingredients: Add the oats, raisins, chopped nuts, cinnamon, salt, and any optional ingredients. Mix until a sticky dough forms.
- Bake: Scoop tablespoon-sized portions onto the baking sheet and flatten slightly. Bake for 12 to 15 minutes until set and lightly golden.
- Cool and enjoy: Let cool on the pan for a few minutes before transferring to a wire rack.
