Marinade:

  • 1/2 cup soy sauce
  • 1/3 cup honey
  • 1/4 cup pineapple juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated

Kebabs:

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • Wooden or metal skewers

Instructions

  1. Prepare Marinade: Whisk together soy sauce, honey, pineapple juice, rice vinegar, sesame oil, garlic, and ginger.
  2. Marinate Chicken: Place chicken in a bag, pour in half of the marinade, and refrigerate for at least 1 hour.
  3. Prep Grill: Soak wooden skewers and preheat grill to medium-high heat.
  4. Assemble Kebabs: Thread chicken, pineapple, bell peppers, and onion onto skewers.
  5. Grill: Grill kebabs for 10–12 minutes, turning and brushing with reserved marinade.
