Description

These Hawaiian BBQ Chicken Wraps combine tender shredded chicken tossed in tangy barbecue sauce with sweet pineapple tidbits and melty cheese, all wrapped in a soft tortilla. Perfect for a quick and flavorful lunch or dinner, they can be enjoyed fresh or grilled to golden perfection for a warm, gooey treat.

Ingredients

Scale

Filling

  • 2 cups cooked shredded chicken (grilled or rotisserie)
  • 1/2 cup barbecue sauce
  • 1 cup canned pineapple tidbits (drained)
  • 1/2 cup shredded mozzarella or Monterey Jack cheese
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup chopped fresh cilantro

Wrap and Grill

  • 4 large flour tortillas
  • 1 tablespoon olive oil or nonstick spray (for grilling, optional)

Instructions

  1. Prepare the chicken mixture: In a medium bowl, combine the shredded cooked chicken with the barbecue sauce, stirring until the chicken is evenly coated with the sauce for a flavorful base.
  2. Warm tortillas: Slightly warm the flour tortillas in a microwave or on a skillet to make them pliable and easy to fold without cracking.
  3. Assemble the wraps: Lay each tortilla flat on a clean surface. Evenly distribute the BBQ chicken mixture, pineapple tidbits, shredded cheese, sliced red onion, and chopped cilantro across the center of each tortilla.
  4. Fold and roll: Fold in the sides of each tortilla over the filling, then roll it up tightly from one end to the other to form a secure wrap.
  5. Grill (optional): Heat a skillet over medium heat and lightly oil it with olive oil or nonstick spray. Place each wrap seam-side down on the skillet and cook for 2–3 minutes per side until the tortilla is golden brown and the cheese has melted inside.
  6. Serve: Remove from heat, slice each wrap in half diagonally if desired, and serve warm for the best flavor and texture experience.

Notes

  • Add sliced jalapeños for a spicy kick to enhance the flavor profile.
  • Swap in coleslaw inside the wrap for added crunch and freshness.
  • These wraps can be prepared ahead of time and stored in the refrigerator for up to 2 days.
  • Use gluten-free tortillas to make the recipe suitable for gluten-free diets.
