Ingredients
Scale
Filling
- 2 cups cooked shredded chicken (grilled or rotisserie)
- 1/2 cup barbecue sauce
- 1 cup canned pineapple tidbits (drained)
- 1/2 cup shredded mozzarella or Monterey Jack cheese
- 1/4 cup red onion (thinly sliced)
- 1/4 cup chopped fresh cilantro
Wrap and Grill
- 4 large flour tortillas
- 1 tablespoon olive oil or nonstick spray (for grilling, optional)
Instructions
- Prepare the chicken mixture: In a medium bowl, combine the shredded cooked chicken with the barbecue sauce, stirring until the chicken is evenly coated with the sauce for a flavorful base.
- Warm tortillas: Slightly warm the flour tortillas in a microwave or on a skillet to make them pliable and easy to fold without cracking.
- Assemble the wraps: Lay each tortilla flat on a clean surface. Evenly distribute the BBQ chicken mixture, pineapple tidbits, shredded cheese, sliced red onion, and chopped cilantro across the center of each tortilla.
- Fold and roll: Fold in the sides of each tortilla over the filling, then roll it up tightly from one end to the other to form a secure wrap.
- Grill (optional): Heat a skillet over medium heat and lightly oil it with olive oil or nonstick spray. Place each wrap seam-side down on the skillet and cook for 2–3 minutes per side until the tortilla is golden brown and the cheese has melted inside.
- Serve: Remove from heat, slice each wrap in half diagonally if desired, and serve warm for the best flavor and texture experience.
Notes
- Add sliced jalapeños for a spicy kick to enhance the flavor profile.
- Swap in coleslaw inside the wrap for added crunch and freshness.
- These wraps can be prepared ahead of time and stored in the refrigerator for up to 2 days.
- Use gluten-free tortillas to make the recipe suitable for gluten-free diets.
