  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 carrots (peeled and diced)

  • 1 tablespoon Worcestershire sauce
  • 1 cup Guinness stout
  • 1/2 cup beef broth
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons all-purpose flour

For the mashed potato topping:

  • 2 pounds potatoes (peeled and cubed)
  • 4 tablespoons butter
  • 1/4 cup milk or cream
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 400°F. In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and carrots. Sauté until softened. Add ground beef and cook until browned.
  2. Stir in tomato paste, Worcestershire sauce, and flour; pour in Guinness and beef broth. Add thyme, salt, and pepper. Simmer until thickened. Stir in peas.
  3. Boil potatoes until tender, then mash with butter, milk, salt, and pepper.
  4. Spread the meat mixture in a baking dish, top with mashed potatoes, create texture with a fork, sprinkle with cheese. Bake until golden and bubbly.
