  • 1 cup Guinness stout beer
  • 10 tablespoons unsalted butter, cut into pieces
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 3/4 cup sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Frosting:

  • 8 ounces cream cheese, softened
  • 1 1/4 cups powdered sugar
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
  2. Mix beer and butter: In a saucepan, combine Guinness and butter over medium heat until butter melts. Whisk in cocoa powder and sugar until smooth. Let cool.
  3. Combine wet ingredients: In a bowl, whisk sour cream, eggs, and vanilla. Mix in the chocolate mixture.
  4. Add dry ingredients: In another bowl, whisk flour, baking soda, and salt. Combine with wet mixture.
  5. Bake: Pour batter into pan and bake for 45–50 minutes. Cool completely.
  6. Prepare frosting: Beat cream cheese until smooth, add powdered sugar, then beat in heavy cream until fluffy. Frost the cake.
