- 1 avocado (sliced)
- 1 cup shredded lettuce or cabbage
- ½ cup thinly sliced cucumber
- ¼ cup chopped fresh herbs (like parsley, basil, or cilantro)
- ½ cup crumbled feta cheese (optional)
For the Green Goddess Sauce:
- ½ avocado
- ¼ cup plain Greek yogurt (or dairy-free yogurt)
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic
- 2 tablespoons chopped chives
- 2 tablespoons chopped parsley
- 1 tablespoon chopped tarragon or basil
- Salt and pepper to taste
Instructions
- Preheat the oven: Preheat oven to 400°F.
- Roast Chickpeas: Toss chickpeas with olive oil, cumin, garlic powder, salt, and black pepper. Roast for 20–25 minutes until crispy.
- Prepare Sauce: Blend all sauce ingredients until smooth.
