Pasta:

  • 12 oz spaghetti or linguine

Shrimp:

  • 1 lb large shrimp (peeled and deveined)

Other:

  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 pint cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • ½ cup crumbled feta cheese
  • 1 tsp dried oregano
  • ¼ tsp crushed red pepper flakes
  • zest and juice of 1 lemon
  • ¼ cup chopped fresh parsley
  • salt and black pepper to taste

Instructions

  1. Cook the Pasta: Prepare pasta according to package instructions until al dente. Reserve ½ cup of pasta water and drain.
  2. Sauté Shrimp: In a skillet over medium heat, sauté garlic in olive oil. Add shrimp, season, and cook until pink; set aside.
  3. Combine Ingredients: In the same skillet, cook cherry tomatoes, then add olives, lemon zest, juice, and red pepper flakes. Return shrimp, add pasta, toss, and add reserved water to create a sauce.
  4. Finish and Serve: Top with feta and parsley. Serve warm.

  • Consider using whole wheat or gluten-free pasta.
  • For extra flavor, add a splash of white wine when cooking tomatoes.
