Pasta:
- 12 oz spaghetti or linguine
Shrimp:
- 1 lb large shrimp (peeled and deveined)
Other:
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1 pint cherry tomatoes (halved)
- ½ cup Kalamata olives (sliced)
- ½ cup crumbled feta cheese
- 1 tsp dried oregano
- ¼ tsp crushed red pepper flakes
- zest and juice of 1 lemon
- ¼ cup chopped fresh parsley
- salt and black pepper to taste
Instructions
- Cook the Pasta: Prepare pasta according to package instructions until al dente. Reserve ½ cup of pasta water and drain.
- Sauté Shrimp: In a skillet over medium heat, sauté garlic in olive oil. Add shrimp, season, and cook until pink; set aside.
- Combine Ingredients: In the same skillet, cook cherry tomatoes, then add olives, lemon zest, juice, and red pepper flakes. Return shrimp, add pasta, toss, and add reserved water to create a sauce.
- Finish and Serve: Top with feta and parsley. Serve warm.

- Consider using whole wheat or gluten-free pasta.
- For extra flavor, add a splash of white wine when cooking tomatoes.
