Marinated Chicken:
- 1 1/2 pounds boneless skinless chicken thighs
- 3 tablespoons olive oil
- 3 tablespoons plain Greek yogurt
- 3 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
Assembly:
- 4 pita or flatbreads
- 1 cup diced tomatoes
- 1/2 cup sliced red onion
- 1 cup shredded lettuce or chopped cucumber
- 1/2 cup crumbled feta cheese
- 1 cup tzatziki sauce
Instructions
- Marinate the Chicken: In a large bowl, combine olive oil, Greek yogurt, lemon juice, garlic, red wine vinegar, oregano, cumin, paprika, salt, and pepper. Add chicken and marinate in the fridge for at least 1 hour.
- Cook the Chicken: Grill or cook chicken in a skillet until fully cooked and slightly charred. Let rest, then slice into strips.
- Assemble the Gyros: Warm pitas, then layer with chicken, tomatoes, red onion, lettuce or cucumber, feta cheese, and tzatziki sauce. Fold and serve warm.
Notes
- You can substitute chicken breasts for thighs.
- For a low-carb option, serve the ingredients over lettuce as a gyro bowl.
- Both homemade and store-bought tzatziki sauce are suitable for this recipe.
