Description

Marinated Chicken:

  • 1 1/2 pounds boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 3 tablespoons plain Greek yogurt
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste

Assembly:

  • 4 pita or flatbreads
  • 1 cup diced tomatoes
  • 1/2 cup sliced red onion
  • 1 cup shredded lettuce or chopped cucumber
  • 1/2 cup crumbled feta cheese
  • 1 cup tzatziki sauce

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, Greek yogurt, lemon juice, garlic, red wine vinegar, oregano, cumin, paprika, salt, and pepper. Add chicken and marinate in the fridge for at least 1 hour.
  2. Cook the Chicken: Grill or cook chicken in a skillet until fully cooked and slightly charred. Let rest, then slice into strips.
  3. Assemble the Gyros: Warm pitas, then layer with chicken, tomatoes, red onion, lettuce or cucumber, feta cheese, and tzatziki sauce. Fold and serve warm.
