Description

This Gourmet Chicken Pesto Sourdough Sandwich combines tender cooked chicken, flavorful basil pesto, sun-dried tomatoes, and fresh spinach layered between crispy sourdough bread slices with melted provolone cheese. Perfectly grilled to golden perfection, this sandwich offers a delicious fusion of American and Italian flavors in a hearty main course.

Ingredients

Scale

Bread and Spread

  • 8 slices sourdough bread
  • 2 tablespoons olive oil or softened butter

Filling

  • 1/2 cup basil pesto
  • 2 cups cooked chicken breast, shredded or sliced
  • 4 slices provolone or mozzarella cheese
  • 1/2 cup sun-dried tomatoes, drained and sliced
  • 1 cup fresh spinach or arugula
  • Salt and pepper to taste (optional)

Instructions

  1. Prepare the bread: Spread a thin layer of olive oil or butter on one side of each slice of sourdough bread to ensure a golden, crispy texture when grilled.
  2. Apply pesto: Flip the bread and spread basil pesto evenly on the opposite side of four of the slices, which will serve as the flavorful base for the sandwich fillings.
  3. Layer the fillings: On the pesto-spread slices, layer the shredded or sliced cooked chicken, followed by the sun-dried tomatoes, provolone cheese slices, and fresh spinach or arugula leaves. Optionally, season with a pinch of salt and pepper to enhance flavor.
  4. Assemble the sandwiches: Top each filled slice with the remaining slices of bread, with the oiled side facing outwards to help create a crisp crust during cooking.
  5. Heat and grill: Preheat a skillet or panini press over medium heat. Place the sandwiches onto the hot surface and cook for 3 to 4 minutes per side, pressing gently to melt the cheese and toast the bread to a golden brown color.
  6. Serve: Remove the sandwiches from the heat, slice in half if desired, and serve warm to enjoy the melty, savory flavors.

Notes

  • Use freshly grilled chicken or convenient rotisserie chicken for best results.
  • Add sliced avocado or roasted red peppers for extra flavor and texture.
  • Make it vegetarian by omitting chicken and adding grilled vegetables or tofu.
