For the beef chops:
- 4 beef loin chops (about 1 inch thick)
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup grated Parmesan cheese
For the scalloped potatoes:
- 2 pounds Yukon gold potatoes, thinly sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- chopped parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish.
- For the potatoes: In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in milk and cream. Add garlic powder, salt, and pepper. Simmer until slightly thickened, about 3–4 minutes. Stir in 1 cup cheddar cheese and 1/4 cup Parmesan until melted. Layer the sliced potatoes in the baking dish and pour the cheese sauce evenly over them. Top with remaining cheddar and Parmesan. Cover with foil and bake for 30 minutes.
- For the beef chops: While the potatoes bake, pat the chops dry and rub with olive oil, garlic, thyme, rosemary, salt, and pepper. Remove foil from potatoes after 30 minutes and place the seasoned chops directly on top. Sprinkle Parmesan over the chops and return dish to oven, uncovered. Bake for another 20–25 minutes, or until chops are cooked to desired doneness and potatoes are tender. Broil for 2–3 minutes if you want a golden, bubbly top. Let rest 5 minutes before serving. Garnish with parsley if desired.
Notes
- Bone-in or boneless beef chops both work.
- For extra richness, add a handful of mozzarella to the potatoes.
- You can prepare the potatoes ahead of time and add the chops just before baking the second half.
