- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 teaspoon dried oregano (or Italian seasoning)
- Salt and pepper, to taste
Equipment
- Skewers (wooden or metal)
Instructions
- Preheat Grill: Preheat your grill to medium heat to prepare for grilling the zucchini skewers.
- Prepare Garlic Butter Mixture: In a small bowl, combine melted butter, minced garlic, dried oregano, salt, and pepper to create a flavorful garlic butter sauce.
- Assemble Skewers: Thread the sliced zucchini rounds onto the skewers, leaving a small space between each slice to ensure even cooking.
- Brush Skewers: Generously brush the garlic butter mixture over the zucchini on the skewers, coating them well for added flavor.
- Grill Zucchini: Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally until the zucchini is tender and has char marks.
Notes
- Soak wooden skewers in water for 20-30 minutes before grilling to prevent burning.
- Feel free to substitute fresh oregano for dried for a more vibrant flavor.
- The skewers can also be cooked on a stovetop grill pan if an outdoor grill is unavailable.
- Adjust the amount of garlic and seasoning to your taste preference.
