Instructions
- Prepare Pineapple Rings: Pat the pineapple rings dry thoroughly using paper towels to remove excess moisture, which helps the batter adhere better and prevents oil splatter during frying.
- Make Batter: In a medium bowl, whisk together the all-purpose flour, cornstarch, granulated sugar, baking powder, and salt until evenly combined. Gradually pour in the cold club soda while whisking continuously until a smooth, slightly thick batter forms, free of lumps.
- Heat Oil: Pour about 2 inches of vegetable oil into a deep skillet or heavy-bottomed pot. Heat the oil over medium-high heat until it reaches 350°F (175°C), ensuring it’s hot enough to crisp the batter without absorbing excess oil.
- Batter Pineapple Rings: Dip each pineapple ring into the prepared batter, allowing any excess batter to drip off gently to avoid clumping.
- Fry Pineapple Rings: Carefully lower 2 to 3 batter-coated pineapple rings into the hot oil at a time. Fry each side for 1–2 minutes or until the rings are golden brown and crispy.
- Drain Excess Oil: Use a slotted spoon to remove the fried pineapple rings from the oil and transfer them to a plate lined with paper towels to drain any excess oil.
