Description

This Garlic Butter Lettuce Tomato & Grilled Chicken Sandwich Recipe is a delicious and satisfying meal that combines tender grilled chicken with flavorful garlic butter, fresh lettuce, juicy tomato, and optional melted cheese, all sandwiched between slices of toasted bread. Perfect for a quick and easy lunch or dinner!

Ingredients

Scale

For the Grilled Chicken:

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Sandwich:

  • 4 slices sandwich bread or 2 sandwich rolls
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 4 leaves romaine or butter lettuce
  • 4 slices ripe tomato
  • 2 slices provolone or mozzarella cheese (optional)

Instructions

  1. Prepare the Grilled Chicken: Pound chicken breasts to even thickness. Rub with olive oil, garlic powder, paprika, salt, and black pepper. Grill over medium heat for 5 to 6 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Remove from grill and let rest for 5 minutes.
  2. Make the Garlic Butter: In a small skillet, melt butter over low heat and add minced garlic. Cook for 1 to 2 minutes, stirring, until fragrant.
  3. Toast the Bread: Brush garlic butter onto bread slices or sandwich rolls. Toast the bread lightly on the grill or in a skillet until golden.
  4. Assemble the Sandwiches: Layer lettuce and tomato on the bottom slice of bread, then top with grilled chicken and cheese if using. Finish with the top slice of bread and serve warm.

Notes

  • For added flavor, spread a thin layer of mayonnaise or pesto on the bread before assembling.
  • You can also use ciabatta rolls or brioche buns for a heartier sandwich.
