Reserve approximately ¼ cup of the rendered sausage fat in the pan; if there is not enough fat, add butter to compensate.
- Make Sawmill Gravy: Add the flour to the sausage drippings in the pan and cook over medium heat, stirring constantly for 5 to 10 minutes until the mixture turns golden and forms a roux. Gradually add 2 cups of milk while stirring continuously, until the gravy thickens. Season with ½ teaspoon salt and ¼ teaspoon pepper, adjusting to taste.
- Toast English Muffins: While preparing the gravy, lightly toast the English muffins until they are crisp and golden.
- Scramble Eggs: In a non-stick skillet, scramble 8 eggs, adding a dash of milk to the eggs before cooking to make them fluffy and soft. Cook over medium heat until just set.
