Egg Bites:

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon or diced ham
  • 1/4 cup diced bell pepper
  • 2 tablespoons chopped green onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • Non-stick cooking spray

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and lightly spray a muffin tin with non-stick cooking spray.
  2. Blend Egg Mixture: In a blender, combine eggs and cottage cheese, blend until smooth, then transfer to a bowl.
