Salmon Croquettes:
- 2 (14.75-ounce) cans pink salmon (drained, bones removed)
- 2 large eggs
- 1/2 cup cornmeal
- 1/4 cup all-purpose flour
- 1/4 cup finely diced onion
- 2 tablespoons chopped green bell pepper (optional)
- 1 tablespoon mayonnaise
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil (for frying)
Instructions
- Mix Ingredients: In a large bowl, combine salmon, eggs, cornmeal, flour, onion, green bell pepper, mayonnaise, Worcestershire sauce, hot sauce, salt, and pepper. Mix well.
- Shape Patties: Shape mixture into 8 small patties.
- Fry: Heat vegetable oil in a skillet. Fry patties for 3–4 minutes per side until golden brown.
- Drain and Serve: Place patties on a paper towel-lined plate to drain. Serve hot with dipping sauce, grits, or rice.
Notes
- For a crispier texture, chill the patties before frying.
- Substitute self-rising cornmeal mix for cornmeal and flour.
- Croquettes freeze well—cook and cool before freezing.
