Description

Salmon Croquettes:

  • 2 (14.75-ounce) cans pink salmon (drained, bones removed)
  • 2 large eggs
  • 1/2 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1/4 cup finely diced onion
  • 2 tablespoons chopped green bell pepper (optional)
  • 1 tablespoon mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon hot sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. Mix Ingredients: In a large bowl, combine salmon, eggs, cornmeal, flour, onion, green bell pepper, mayonnaise, Worcestershire sauce, hot sauce, salt, and pepper. Mix well.
  2. Shape Patties: Shape mixture into 8 small patties.
  3. Fry: Heat vegetable oil in a skillet. Fry patties for 3–4 minutes per side until golden brown.
  4. Drain and Serve: Place patties on a paper towel-lined plate to drain. Serve hot with dipping sauce, grits, or rice.

  • For a crispier texture, chill the patties before frying.
  • Substitute self-rising cornmeal mix for cornmeal and flour.
