Description

For the Sushi Rice:

  • 1 1/2 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

For the Salmon Filling:

  • 1 cup cooked salmon, flaked
  • 1/4 cup Japanese mayo (like Kewpie)
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon soy sauce

Additional Ingredients:

  • 6 sheets roasted seaweed (nori), quartered
  • 1/2 avocado, diced
  • 1/2 cucumber, finely chopped
  • 1 teaspoon toasted sesame seeds
  • Chopped green onions for garnish

Instructions

  1. Prepare the Sushi Rice: Mix rice vinegar, sugar, and salt with warm sushi rice.
  2. Preheat and Prep: Preheat oven to 375°F (190°C) and grease a muffin tin. Press nori into each cup and add seasoned rice.
  3. Make Salmon Mixture: Combine salmon, Japanese mayo, sriracha, and soy sauce. Spoon over rice in each cup.
  4. Bake: Bake for 10–12 minutes until golden.
  5. Finish and Serve: Top with avocado, cucumber, sesame seeds, and green onions. Enjoy warm or at room temperature.
