- 1/4 cup brown sugar

- 2 large eggs
- 1/2 cup whole milk or evaporated milk
Flavorings and Dry Ingredients:
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg (optional)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and grease a 9×9-inch or 8-inch round baking pan.
- Mix Wet Ingredients: In a large bowl, mash the ripe plantains, then mix in sugars and melted butter. Add eggs, milk, and vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, cinnamon, salt, and nutmeg (if using). Add to wet mixture and stir until combined.
- Bake: Pour the batter into the pan and bake for 35–40 minutes until a toothpick comes out clean. Cool before serving.
