For the Casserole:
- 1 tablespoon butter
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1 cup diced cooked ham
- 2 cups frozen hash browns (thawed)
- 8 large eggs
- 1/3 cup milk
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Garnish:
- Chopped green onions
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
- Sauté veggies and ham: In a skillet, melt butter and cook onion and bell peppers until softened. Add ham and heat through. Remove from heat.
- Prepare casserole mixture: In a bowl, whisk eggs, milk, salt, and pepper. Stir in hash browns, sautéed veggies and ham, and half of the cheese. Pour into baking dish and top with remaining cheese.
- Bake: Bake for 35–40 minutes until set and golden. Let rest for 5 minutes before serving. Garnish with green onions.
