  • 1 tablespoon butter
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1 cup diced cooked ham
  • 2 cups frozen hash browns (thawed)
  • 8 large eggs
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Garnish:

  • Chopped green onions

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Sauté veggies and ham: In a skillet, melt butter and cook onion and bell peppers until softened. Add ham and heat through. Remove from heat.
  3. Prepare casserole mixture: In a bowl, whisk eggs, milk, salt, and pepper. Stir in hash browns, sautéed veggies and ham, and half of the cheese. Pour into baking dish and top with remaining cheese.
  4. Bake: Bake for 35–40 minutes until set and golden. Let rest for 5 minutes before serving. Garnish with green onions.
