Ingredients
Scale
Meat Mixture
- 1 lb ground beef, drained
- 2 tablespoons taco seasoning
- 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles, drained
Assembly
- 1 ½ cups cheddar cheese, shredded
- 24 wonton wrappers
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the taco cups to crispy perfection.
- Cook Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks to ensure even cooking. Once browned, drain any excess grease to keep the taco cups from becoming oily.
- Add Seasoning and Tomatoes: Stir in the taco seasoning and the drained Ro-Tel diced tomatoes with green chiles. Let the mixture simmer for 2-3 minutes until everything is well combined and heated through, allowing the flavors to meld.
- Prepare Muffin Tin: Lightly grease a muffin tin with cooking spray or oil. Press one wonton wrapper into each muffin cup, shaping it to form a small cup that will hold the beef mixture.
- Fill Wonton Cups: Spoon the beef mixture evenly into each wonton wrapper cup, filling them generously but without overflowing.
- Add Cheese: Top each filled taco cup with a sprinkle of shredded cheddar cheese, which will melt and add a delicious cheesy layer.
- Bake: Bake in the preheated oven for about 10-12 minutes, or until the wonton wrappers are golden brown and crispy and the cheese is melted and bubbly.
- Cool and Serve: Allow the taco cups to cool for a few minutes before removing them from the muffin tin. Garnish with desired toppings such as sour cream, guacamole, or salsa for extra flavor and serve immediately.
Notes
- For an extra crispy shell, you can brush the wonton wrappers lightly with oil before baking.
- Feel free to customize the filling by adding black beans, corn, or diced onions for added texture and flavor.
- These can be made ahead and refrigerated before baking; just add a couple of extra minutes to the bake time if baking cold.
- Use low-fat cheese to reduce calories if desired.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in the oven to retain crispiness.
