- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth

- Salt and pepper to taste
- 8 oz lasagna noodles, broken into pieces
For the Ricotta Mixture:
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- Salt and pepper to taste
For Serving:
- Shredded mozzarella cheese
- Fresh basil, chopped
Instructions
- Brown the Sausage: In a skillet, cook the Italian sausage over medium heat until browned, breaking it into small pieces. Drain off any excess fat.
- Saute Onion and Garlic: Add the diced onion to the skillet with the sausage and cook until softened. Add the minced garlic and cook for another minute.
- Combine Ingredients in Crockpot: Transfer the cooked sausage, onion, and garlic to a slow cooker. Add the crushed tomatoes, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir to combine.
- Cook the Soup: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors have melded together.
- Cook the Pasta: About 30 minutes before serving, stir in the broken lasagna noodles and cook until al dente.
- Make the Ricotta Mixture: In a small bowl, combine the ricotta cheese, Parmesan cheese, chopped basil, salt, and pepper.
- Serve: To serve, ladle the soup into bowls and top each serving with a dollop of the ricotta mixture, shredded mozzarella cheese, and chopped fresh basil.
