For the soup:
- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups beef broth
- 1 tablespoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 1 teaspoon salt
For serving:
- 8 ounces broken lasagna noodles or broken lasagna-style pasta
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- fresh basil or parsley for garnish
Instructions
- Cook the beef and onion: In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is softened.
- Add garlic: Add garlic and cook for 1 minute more. Transfer the mixture to the crockpot.
- Combine ingredients: Stir in crushed tomatoes, beef broth, Italian seasoning, red pepper flakes, and salt. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- Add noodles: About 30 minutes before serving, add broken lasagna noodles and stir well. Continue cooking until noodles are tender.
- Serve: Ladle soup into bowls and top each serving with a spoonful of ricotta cheese, shredded mozzarella, and grated Parmesan. Garnish with fresh basil or parsley.
Notes
- For a vegetarian version, substitute ground beef with cooked lentils or mushrooms and use vegetable broth.
- You can also add spinach or kale for extra greens.
