Ingredients:
- 2 lbs boneless skinless chicken breasts
- 1 packet taco seasoning
- 1 can (10 oz) Rotel diced tomatoes with green chiles (undrained)
- 1 can (15 oz) black beans (drained and rinsed)
- 1 cup frozen corn
- 1/2 cup diced onion
- 1/2 cup chicken broth
- 1 tablespoon lime juice
- 1 cup shredded cheddar or Mexican blend cheese
- 6–8 large flour tortillas
- optional toppings: sour cream, guacamole, salsa, chopped cilantro
Instructions
- Place the chicken in the crockpot: Add chicken breasts to the bottom of the crockpot.
- Season the chicken: Sprinkle taco seasoning over the chicken.
- Add remaining ingredients: Pour in Rotel, black beans, corn, onion, and chicken broth.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- Shred the chicken: Use forks to shred the chicken in the crockpot.
- Add cheese and lime juice: Stir in cheese and lime juice until melted and combined.
- Prepare burritos: Warm tortillas, fill with chicken mixture, and roll into burritos.
- Serve: Enjoy with your favorite toppings.
