Description

These Crispy Low Calorie Air Fryer Zucchini Fries are a delicious and healthier alternative to traditional fries. With a crunchy coating and tender zucchini inside, they make a perfect appetizer or side dish for any meal.

Zucchini Fries:

  • 2 medium zucchinis cut into fry-shaped sticks

Breadcrumb Mixture:

  • 1/2 cup panko breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Other:

  • 1 large egg, beaten
  • cooking spray

Instructions

  1. Preheat Air Fryer: Preheat air fryer to 400°F (200°C).
  2. Prepare Zucchini: Pat zucchini sticks dry with paper towels.
  3. Prepare Coating: In a shallow bowl, mix panko, Parmesan, garlic powder, smoked paprika, salt, and pepper.
  4. Prepare Egg Wash: In another bowl, place beaten egg.
  5. Coat Zucchini: Dip each zucchini stick into egg, then coat with breadcrumb mixture, pressing lightly so crumbs adhere.
  6. Air Fry: Arrange in a single layer in the air fryer basket without overcrowding. Lightly spray with cooking spray. Air fry for 8–10 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve: Serve hot with marinara or low-fat ranch for dipping if desired.

Notes

  • For extra crunch, use seasoned panko or add a pinch of cayenne pepper to the breadcrumb mix.
