These Crispy Low Calorie Air Fryer Zucchini Fries are a delicious and healthier alternative to traditional fries. With a crunchy coating and tender zucchini inside, they make a perfect appetizer or side dish for any meal.

Zucchini Fries:
- 2 medium zucchinis cut into fry-shaped sticks
Breadcrumb Mixture:
- 1/2 cup panko breadcrumbs
- 2 tbsp grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
Other:
- 1 large egg, beaten

Instructions
- Preheat Air Fryer: Preheat air fryer to 400°F (200°C).
- Prepare Zucchini: Pat zucchini sticks dry with paper towels.
- Prepare Coating: In a shallow bowl, mix panko, Parmesan, garlic powder, smoked paprika, salt, and pepper.
- Prepare Egg Wash: In another bowl, place beaten egg.
- Coat Zucchini: Dip each zucchini stick into egg, then coat with breadcrumb mixture, pressing lightly so crumbs adhere.
- Air Fry: Arrange in a single layer in the air fryer basket without overcrowding. Lightly spray with cooking spray. Air fry for 8–10 minutes, flipping halfway through, until golden brown and crispy.
- Serve: Serve hot with marinara or low-fat ranch for dipping if desired.
Notes
- For extra crunch, use seasoned panko or add a pinch of cayenne pepper to the breadcrumb mix.
- Best served immediately but can be reheated in the air fryer for 2–3 minutes.
