Cauliflower Bites:

  • 1 medium head cauliflower, cut into bite-sized florets

Breadcrumb Mixture:

  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Coating:

  • 2 large eggs, beaten

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Prepare the coating: In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. In another bowl, place the beaten eggs.
  3. Coat the cauliflower: Dip each cauliflower floret into the egg, letting the excess drip off, then roll in the breadcrumb mixture until well coated.
  4. Bake: Arrange the coated florets on the prepared baking sheet in a single layer. Lightly spray the tops with cooking spray. Bake for 20–25 minutes, turning once halfway through, until golden brown and crispy.
