Cauliflower Bites:

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Coating:
- 2 large eggs, beaten

Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Prepare the coating: In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. In another bowl, place the beaten eggs.
- Coat the cauliflower: Dip each cauliflower floret into the egg, letting the excess drip off, then roll in the breadcrumb mixture until well coated.
- Bake: Arrange the coated florets on the prepared baking sheet in a single layer. Lightly spray the tops with cooking spray. Bake for 20–25 minutes, turning once halfway through, until golden brown and crispy.
- Serve: Serve hot with your favorite dipping sauce.

- For a spicier version, add 1/2 teaspoon cayenne pepper to the breadcrumb mixture.
